Description
Deliciously rich brownies made with Biscoff cookie butter and white chocolate.
Ingredients

- 115g unsalted butter, melted
- 150g light brown sugar, packed
- 60g granulated sugar
- 125g Biscoff cookie butter (plus more for drizzling)
- 1 large egg, at room temperature
- 1 tsp vanilla extract
- 125g all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 90g white chocolate chunks or chips
- Optional: Crushed Biscoff cookies for topping
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
- In a bowl, whisk together melted butter, brown sugar, and granulated sugar.
- Add in Biscoff cookie butter, egg, and vanilla. Whisk until smooth.
- In a separate bowl, combine flour, baking powder, and salt.
- Fold the dry mixture into the wet until just combined.
- Stir in white chocolate chunks.
- Spread batter into the pan. Swirl extra Biscoff spread on top and optionally add crushed cookies.
- Bake for 25–30 minutes, until edges are golden and center is just set.
- Let cool completely in the pan.
- Slice into squares and enjoy.
Notes
- These brownies can be stored in an airtight container for up to a week.
- For an extra touch, top with additional Biscoff spread before serving.
