Description

Delightfully tangy and sweet, these blackberry lime cupcakes are perfect for any occasion!

Ingredients

Scale
  • 1 and 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • Zest of 1 lime
  • 1 tablespoon lime juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blackberries
  • Lime slices, for garnish
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2 tablespoons blackberry puree (blend fresh blackberries and strain)
  • 1 tablespoon lime juice (for frosting)
  • A few drops of purple gel food coloring (optional)

Instructions

  1. Preheat and Prep: Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Make the Batter: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lime zest, and lime juice. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined.
  3. Bake the Cupcakes: Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  4. Prepare the Frosting: In a large bowl, beat the butter until creamy. Gradually add powdered sugar, beating until smooth. Mix in blackberry puree and lime juice until well combined. Add food coloring if desired.
  5. Assemble the Cupcakes: Pipe or spread the frosting onto the cooled cupcakes. Decorate with fresh blackberries and lime slices on top.

Notes

  • Ensure the cupcakes are completely cooled before frosting to prevent the frosting from melting.
  • For a more pronounced lime flavor, increase the lime zest slightly.
  • Use a piping bag for a more decorative frosting swirl.
  • Store cupcakes in an airtight container at room temperature for up to 2 days.
