- A few drops of purple gel food coloring (optional)
Instructions
- Preheat and Prep: Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Make the Batter: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a large bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lime zest, and lime juice. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined.
- Bake the Cupcakes: Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Prepare the Frosting: In a large bowl, beat the butter until creamy. Gradually add powdered sugar, beating until smooth. Mix in blackberry puree and lime juice until well combined. Add food coloring if desired.
- Assemble the Cupcakes: Pipe or spread the frosting onto the cooled cupcakes. Decorate with fresh blackberries and lime slices on top.
