- 4 oz cream cheese (softened)
- 1 cup fresh blueberries
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- Honey or maple syrup (optional for drizzling)
Instructions
- Prepare the Filling: In a small bowl, combine the softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy.
- Assemble the Quesadilla: Spread the cream cheese mixture evenly over one of the tortillas. Sprinkle the fresh blueberries evenly over the cream cheese layer. Place the second tortilla on top to cover the filling.
- Cook the Quesadilla: Heat a non-stick skillet over medium heat and add butter. Once the butter has melted, carefully place the quesadilla in the skillet. Cook for about 3-4 minutes, or until the bottom is golden brown. Flip the quesadilla carefully and cook the other side for an additional 3-4 minutes, until golden and the filling is warmed through.
- Serve: Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and drizzle with honey or maple syrup, if desired.

- For extra flavor, add a sprinkle of cinnamon to the cream cheese mixture.
- If you prefer a crunchier texture, consider adding some crushed nuts, like almonds or pecans, to the filling.
