Ingredients

  • 2 large boneless, skinless chicken breasts, diced
  • 1 1/2 cups orzo pasta
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 red bell pepper, diced
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add diced chicken breast, season with Cajun seasoning, salt, and black pepper, and cook until browned, about 5 minutes.
  2. Add chopped onion, minced garlic, and diced bell pepper to the skillet. Cook for 3-4 minutes until the vegetables are softened.
  3. Stir in the orzo pasta and cook for 1-2 minutes, allowing it to toast slightly.
  4. Pour in chicken broth and bring to a simmer. Cook, stirring occasionally, for about 10 minutes, until most of the liquid is absorbed and orzo is al dente.
  5. Reduce heat to low, pour in heavy cream and stir in grated Parmesan cheese. Simmer gently for 2-3 minutes until the sauce is creamy and the chicken is cooked through.
  6. Remove from heat, garnish with sliced green onions, and serve immediately.
