- 2 large boneless, skinless chicken breasts, diced
- 1 1/2 cups orzo pasta
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 red bell pepper, diced
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, sliced (for garnish)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add diced chicken breast, season with Cajun seasoning, salt, and black pepper, and cook until browned, about 5 minutes.
- Add chopped onion, minced garlic, and diced bell pepper to the skillet. Cook for 3-4 minutes until the vegetables are softened.
- Stir in the orzo pasta and cook for 1-2 minutes, allowing it to toast slightly.
- Pour in chicken broth and bring to a simmer. Cook, stirring occasionally, for about 10 minutes, until most of the liquid is absorbed and orzo is al dente.
- Reduce heat to low, pour in heavy cream and stir in grated Parmesan cheese. Simmer gently for 2-3 minutes until the sauce is creamy and the chicken is cooked through.
- Remove from heat, garnish with sliced green onions, and serve immediately.
