Description

A healthy and delicious cauliflower fried rice that’s quick to make!


Ingredients

Scale
  • 1 medium head cauliflower (about 4 cups riced)
  • 1 cup carrots, finely chopped
  • 1 cup green peas (frozen)
  • 4 green onions, sliced (white and green parts)
  • 3 cloves garlic, minced
  • 2 large eggs, beaten
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil

Instructions

  1. Prepare the Cauliflower Rice: Remove leaves and cut cauliflower into florets. Pulse in a food processor until it resembles rice grains.
  2. Sauté Aromatics: Heat a large skillet over medium heat with 1 tbsp sesame oil. Add minced garlic and half of the green onions; cook for about one minute.
  3. Add Veggies: Stir in carrots and peas, sautéing for five minutes until tender.
  4. Cook the Eggs: Push veggies to one side; add beaten eggs to the other side. Scramble until set, then mix everything together.
  5. Combine with Cauliflower Rice: Add riced cauliflower and soy sauce; stir well and cook for another five minutes until heated through.
  6. Serve: Transfer to bowls or plates and garnish with remaining green onions.
