Description

A delicious and hearty breakfast casserole packed with bacon, sausage, and cheese, perfect for serving a crowd.

Ingredients

Scale
  • 8 slices bacon, cooked and crumbled
  • 1 pound sausage, cooked and crumbled
  • 8 large eggs
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 small red bell pepper, diced
  • 1 tablespoon olive oil (for sautéing)
  • Cooking spray or butter (for greasing the baking dish)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Bacon and Sausage: In a large skillet, cook the bacon until crispy. Remove and crumble. In the same skillet, cook the sausage until browned. Drain excess grease.
  3. Sauté the Vegetables: In a small pan, add olive oil and sauté the diced onion and red bell pepper until soft.
  4. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper.
  5. Assemble the Casserole: Grease a 9×13-inch baking dish with cooking spray or butter. Spread the cooked sausage and sautéed vegetables evenly in the dish. Pour the egg mixture over the top. Sprinkle the shredded cheddar cheese and crumbled bacon evenly over the mixture.
  6. Bake: Place in the preheated oven and bake for 30-35 minutes or until the eggs are set and the top is golden brown.
  7. Cool and Serve: Allow the casserole to cool for a few minutes before cutting into squares to serve.

Notes

  • For added flavor, consider adding chopped green onions or fresh herbs like parsley or chives on top after baking.
  • For a spicy kick, add chopped jalapeños or red pepper flakes to the egg mixture.
  • This casserole can be made a day ahead and reheated in the oven before serving. It also freezes well for meal prep.
