Description

A delicious and easy-to-make cheesy beef quesadilla recipe perfect for any meal!

Ingredients

Scale
  • 1 lb beef (such as shredded brisket or flank steak)
  • 2 cups shredded cheese (like Monterey Jack, cheddar, or mozzarella)
  • 4 large flour tortillas
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Salsa or sour cream for serving (optional)

Instructions

  1. Prepare the Beef: Cook the beef in a slow cooker or pressure cooker until tender, then shred with a fork. Season with cumin, chili powder, salt, and pepper.
  2. Cook the Vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and bell pepper, cooking until soft and caramelized. Remove from skillet.
  3. Assemble the Quesadillas: Heat a clean skillet over medium heat and add a bit of olive oil. Place one flour tortilla in the skillet. Sprinkle a layer of cheese on one half of the tortilla. Add a layer of shredded beef, then onions and peppers. Top with another layer of cheese. Fold the tortilla in half, pressing gently with a spatula.
  4. Cook the Quesadillas: Cook until the tortilla is golden brown and the cheese is melted, about 2-3 minutes per side. Remove from skillet and keep warm. Repeat with remaining tortillas and filling.
  5. Serve: Cut the quesadillas into wedges. Garnish with fresh cilantro. Serve with salsa or sour cream on the side if desired.

Notes

  • For extra flavor, you can marinate the beef overnight with spices before cooking.
  • Use a combination of cheeses for a richer flavor.
  • Serve with lime wedges for a tangy kick.
  • Ensure the skillet is not too hot to prevent the tortillas from burning before the cheese melts.
