- 4 large flour tortillas
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Salsa or sour cream for serving (optional)
Instructions
- Prepare the Beef: Cook the beef in a slow cooker or pressure cooker until tender, then shred with a fork. Season with cumin, chili powder, salt, and pepper.
- Cook the Vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and bell pepper, cooking until soft and caramelized. Remove from skillet.
- Assemble the Quesadillas: Heat a clean skillet over medium heat and add a bit of olive oil. Place one flour tortilla in the skillet. Sprinkle a layer of cheese on one half of the tortilla. Add a layer of shredded beef, then onions and peppers. Top with another layer of cheese. Fold the tortilla in half, pressing gently with a spatula.
- Cook the Quesadillas: Cook until the tortilla is golden brown and the cheese is melted, about 2-3 minutes per side. Remove from skillet and keep warm. Repeat with remaining tortillas and filling.
- Serve: Cut the quesadillas into wedges. Garnish with fresh cilantro. Serve with salsa or sour cream on the side if desired.
