Ingredients

- 2 cups cream cheese, softened
- 1 cup white granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 can of crescent roll dough (or puff pastry sheets)
- 1/2 cup butter, melted
- 1/4 cup brown sugar
- 1/4 cup white granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Prepare the Cheesecake Filling:
- In a bowl, combine the softened cream cheese and 1 cup of white granulated sugar. Mix until smooth.
- Add vanilla extract and mix well.
- Add the eggs, one at a time, beating well after each addition until fully incorporated. Set aside.
- Prepare the Dough:
- Preheat your oven to 350°F (175°C).
- Roll out the crescent roll dough or puff pastry sheets on a lightly floured surface into a large rectangle. Cut into even squares or rectangles to form the base and top layers.
- Assemble the Bites:
- Place half of the cut dough pieces on a baking sheet lined with parchment paper.
- Spread or pipe the cheesecake filling onto each piece of dough.
- Cover with another piece of dough and press the edges gently to seal.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
- Cinnamon Sugar Coating:
- In a small bowl, mix 1/4 cup white sugar, 1/4 cup brown sugar, and 1 tablespoon cinnamon.
- Once the cheesecake bites are out of the oven, brush them with melted butter.
- Generously coat each bite with the cinnamon sugar mixture.
- Serve and Enjoy:
- Allow to cool slightly before serving.
- Serve warm or at room temperature.

- Ensure the cream cheese is fully softened to avoid lumps in the cheesecake mixture.
- For added flavor, consider adding a hint of nutmeg to the cinnamon sugar mixture.
- Serve with a drizzle of caramel for an extra indulgent touch.
