Description

A comforting chicken rice porridge recipe combining tender chicken and aromatic rice.


Ingredients

  • 2 lbs Chicken
  • 3/4 cup Jasmine Rice
  • 3/4 cup Sweet Rice (Glutinous Rice)
  • 2 Maggi Magic Chicken Cube
  • 34 ounces Water
  • 8 cloves Garlic, chopped
  • 3 Onions, chopped
  • 3 thumbs Ginger, julienne
  • 8 Hard-boiled Eggs
  • 1 cup Green Onions, chopped
  • 1 tablespoon Safflower
  • 1 teaspoon Turmeric Powder
  • to taste Fish Sauce
  • to taste Ground Black Pepper

Instructions

  1. Heat a generous amount of oil in a wok. Add the chopped garlic and slow-fry until it turns golden brown, then remove it and set aside.
  2. In the remaining oil, toss in the chopped onions and sauté until softened. Add the julienned ginger and cook for about 1 minute until fragrant.
  3. Add the chicken pieces to the wok, sautéing until lightly browned. Season with fish sauce.
  4. Stir in the jasmine and sweet rice, mixing well for about 30 seconds.
  5. Pour in the water and bring to a boil. Add the Maggi Magic Chicken cubes, then reduce heat and let simmer for about 35 minutes.
  6. Add the safflower and turmeric for color, adjusting flavor with additional fish sauce and ground black pepper as needed.
  7. Gently fold in the hard-boiled eggs and crispy fried garlic, then sprinkle the chopped green onions over the top before serving.
