Description

A delicious cheesy chicken and broccoli bake that’s easy to prepare and perfect for weeknight dinners.


Ingredients

  • 2 pounds chicken breast cut into pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cloves garlic minced
  • 3 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 3 cups broccoli florets
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F. Season chicken with salt and black pepper. Tip: Even seasoning helps flavor the entire bake.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 6 to 8 minutes until lightly golden and cooked through then set aside.
  3. In the same skillet melt butter and add garlic. Cook for 30 seconds until fragrant. Tip: Stir constantly to avoid burning.
  4. Add chicken broth and heavy cream. Simmer for 3 to 4 minutes until slightly thickened. Tip: Keep heat low to prevent curdling.
  5. Stir in Parmesan cheese until smooth. Taste and adjust seasoning.
  6. Place chicken and broccoli in a baking dish. Pour sauce evenly over the top.
  7. Sprinkle mozzarella cheese over the dish. Bake for 25 to 30 minutes until bubbly and lightly golden. Tip: Let rest 5 minutes before serving.
