Description

A deliciously creamy mushroom chicken skillet that’s easy to prepare and perfect for a weeknight dinner.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 cups sliced mushrooms
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • to taste salt
  • to taste pepper
  • for garnish Fresh parsley, chopped

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. Cook the Mushrooms: In the same skillet, add the sliced mushrooms and garlic. Sauté until the mushrooms are tender and golden brown.
  4. Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream and bring it to a simmer. Add the Parmesan cheese and stir until the sauce is smooth and thickened.
  5. Combine and Serve: Return the cooked chicken to the skillet, spooning the sauce and mushrooms over the top. Allow to simmer for a few more minutes until the chicken is warmed through. Garnish with freshly chopped parsley before serving.
