A deliciously creamy mushroom chicken skillet that’s easy to prepare and perfect for a weeknight dinner.

- 3–4 boneless, skinless chicken breasts
- 2 cups sliced mushrooms
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese

- for garnish Fresh parsley, chopped
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- Cook the Mushrooms: In the same skillet, add the sliced mushrooms and garlic. Sauté until the mushrooms are tender and golden brown.
- Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream and bring it to a simmer. Add the Parmesan cheese and stir until the sauce is smooth and thickened.
- Combine and Serve: Return the cooked chicken to the skillet, spooning the sauce and mushrooms over the top. Allow to simmer for a few more minutes until the chicken is warmed through. Garnish with freshly chopped parsley before serving.
Notes
- For extra flavor, add a splash of white wine to the sauce.
- Ensure not to overcook the chicken to keep it juicy and tender.
- Serve with mashed potatoes or pasta to complement the creamy sauce.
