Ingredients
- 2 cups fresh pineapple, chopped
- 1 cup coconut cream
- 1 cup heavy whipping cream
- 1/2 cup sweetened shredded coconut
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon toasted coconut flakes (for garnish)
- 1/4 cup maraschino cherries (optional, for garnish)
Instructions

Prepare the Pineapple:
Chop the fresh pineapple into small cubes and set aside. -
Whip the Cream:
In a large mixing bowl, combine the heavy whipping cream, sugar, and vanilla extract. Use an electric mixer on medium-high speed to whip until soft peaks form. -
Mix with Coconut Cream:
Gently fold the coconut cream into the whipped cream until well combined. -
Combine with Pineapple:
Add the chopped pineapple and sweetened shredded coconut into the cream mixture. Gently fold everything together until the pineapple and coconut are evenly distributed. -
Chill:
Refrigerate the mixture for at least 2 hours, allowing the flavors to meld and the dessert to set. -
Serve:
Spoon the chilled mixture into serving bowls or cups. Garnish with toasted coconut flakes and maraschino cherries, if using.
Notes
- For added flavor, consider adding a splash of rum or coconut liqueur to the mixture.
- Make sure the coconut cream is well mixed; sometimes the cream can separate in the can.
- Adjust the sweetness to your preference by varying the amount of sugar.
