- Fresh strawberries or strawberry powder for garnish
Instructions
- Prepare Strawberry Puree: In a blender, combine the sliced strawberries, granulated sugar, and lemon juice. Blend until smooth. Strain the mixture through a fine mesh sieve to remove seeds. Set aside.
- Dissolve Gelatin: In a small bowl, sprinkle the gelatin over cold water. Let it sit for about 5 minutes to bloom. Gently heat the bloomed gelatin in a microwave or small saucepan until completely dissolved. Make sure to stir to avoid clumps.
- Combine Gelatin with Strawberry Puree: Stir the dissolved gelatin into the strawberry puree until well combined. Let the mixture cool to room temperature.
- Prepare Whipped Cream: In a large bowl, whisk the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Fold and Assemble: Gently fold the cooled strawberry mixture into the whipped cream until fully incorporated. Divide the mousse evenly into serving glasses or bowls.
- Chill and Serve: Refrigerate the parfaits for at least 2 hours or until set. Garnish with fresh strawberries or a sprinkle of strawberry powder before serving.

- Ensure the gelatin mixture is completely smooth before combining it with the strawberry puree to prevent lumps.
- For a lighter mousse, you can fold in some beaten egg whites before adding the whipped cream.
- If fresh strawberries are unavailable, frozen ones can be used. Just thaw them completely and drain excess liquid before blending.
- Use strawberry powder made from freeze-dried strawberries as a flavorful garnish.
