Description

This delightful and creamy strawberry mousse parfait is a perfect dessert for summer.

Ingredients

Scale
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons gelatin powder
  • 2 tablespoons cold water
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries or strawberry powder for garnish

Instructions

  1. Prepare Strawberry Puree: In a blender, combine the sliced strawberries, granulated sugar, and lemon juice. Blend until smooth. Strain the mixture through a fine mesh sieve to remove seeds. Set aside.
  2. Dissolve Gelatin: In a small bowl, sprinkle the gelatin over cold water. Let it sit for about 5 minutes to bloom. Gently heat the bloomed gelatin in a microwave or small saucepan until completely dissolved. Make sure to stir to avoid clumps.
  3. Combine Gelatin with Strawberry Puree: Stir the dissolved gelatin into the strawberry puree until well combined. Let the mixture cool to room temperature.
  4. Prepare Whipped Cream: In a large bowl, whisk the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  5. Fold and Assemble: Gently fold the cooled strawberry mixture into the whipped cream until fully incorporated. Divide the mousse evenly into serving glasses or bowls.
  6. Chill and Serve: Refrigerate the parfaits for at least 2 hours or until set. Garnish with fresh strawberries or a sprinkle of strawberry powder before serving.

Notes

  • Ensure the gelatin mixture is completely smooth before combining it with the strawberry puree to prevent lumps.
  • For a lighter mousse, you can fold in some beaten egg whites before adding the whipped cream.
  • If fresh strawberries are unavailable, frozen ones can be used. Just thaw them completely and drain excess liquid before blending.
  • Use strawberry powder made from freeze-dried strawberries as a flavorful garnish.
