- 20 sheets egg roll wrappers
- 2 cups cabbage, finely shredded
- 1 cup carrot, julienned
- 1/2 cup green onions, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups vegetable oil (for frying)

Instructions
- Prepare the Filling:
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add garlic, cabbage, carrot, and green onions to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender.
- Season the mixture with soy sauce, sesame oil, salt, and black pepper. Mix well and let the mixture cool.
- Assemble the Egg Rolls:
- Lay an egg roll wrapper on a clean surface with a corner pointing toward you.
- Spoon 2 tablespoons of the beef mixture onto the lower third of the wrapper.
- Fold the corner over the filling, then fold in the side corners and roll tightly.
- Moisten the top corner with water and seal the edges. Repeat with the remaining wrappers and filling.
- Fry the Egg Rolls:
- Heat the vegetable oil in a deep fryer or heavy skillet to 350°F (175°C).
- Carefully add the egg rolls to the oil, a few at a time, and fry until golden brown and crispy, about 4-5 minutes.
- Remove and drain on paper towels.
- Serve:
- Serve the crispy beef egg rolls hot with sweet chili sauce for dipping.
Notes
- Ensure the oil is hot enough before adding egg rolls to prevent them from becoming greasy.
- You can add other vegetables like bell peppers or bean sprouts for added flavor.
- To make ahead, prepare the rolls and freeze them uncooked. Fry directly from frozen, adding an extra minute to the cooking time.
