This rich and moist chocolate layer cake is perfect for any celebration!

- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda

- 2 large eggs

- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1/2 cup unsalted butter
- 2 cups confectioners’ sugar
- 1/4 cup unsweetened cocoa powder (for frosting)
- 1/4 cup heavy cream
- 8 oz cream cheese
- 1 teaspoon vanilla extract (for frosting)
- 1/2 cup dark chocolate, melted (for ganache)
- Chocolate shavings (optional for garnish)
Instructions
- Prepare the Cake:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until combined.
- Carefully stir in boiling water until the batter is thin.
- Pour the batter evenly into the prepared cake pans.
- Bake:
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for 10 minutes. Remove from pans and allow to cool completely on a wire rack.
- Prepare the Frosting:
- In a medium bowl, beat together butter and cream cheese until smooth.
- Add confectioners’ sugar, cocoa powder, and vanilla. Beat until light and fluffy.
- Slowly add heavy cream and beat until spreadable consistency is reached.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a layer of frosting on top.
- Add the second cake layer. Cover the entire cake with frosting.
- Ganache and Decoration:
- Pour melted dark chocolate over the top of the cake, allowing it to drip down the sides.
- Optionally, sprinkle with chocolate shavings.
Notes
- Ensure the cake layers are completely cooled before frosting to prevent the frosting from melting.
- For a richer flavor, use high-quality cocoa powder and chocolate.
- The cake can be stored in the refrigerator for up to 3 days. Bring to room temperature before serving.
