Deliciously tangy and sweet gluten-free lemon bars made with fresh ingredients.

Ingredients

Scale
  • 1 cup Gluten-Free Flour
  • 1/2 cup Unsalted Butter (softened)
  • 1/4 cup Powdered Sugar
  • 1 pinch Salt
  • 3 large Eggs (room temperature)
  • 1 cup Granulated Sugar
  • 1/2 cup Fresh Lemon Juice (freshly squeezed)
  • 1 tablespoon Lemon Zest
  • 1/2 cup Gluten-Free Flour
  • 1 pinch Salt
  • 1 teaspoon Baking Powder
  • 1 cup Powdered Sugar (for dusting)
  • 1 tablespoon Lemon Zest (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish and line it with parchment paper.
  2. Cream together softened unsalted butter, 1/4 cup granulated sugar, lemon zest, and vanilla extract in a large bowl until fluffy.
  3. Mix in 1 cup of gluten-free flour and kosher salt until you achieve a smooth dough consistency.
  4. Press the dough evenly into the prepared baking dish. Poke holes with a fork and bake for 20 minutes until golden brown.
  5. For the filling, whisk together room temperature eggs, 1 cup of granulated sugar, freshly squeezed lemon juice, the remaining lemon zest, 1/2 cup of gluten-free flour, and kosher salt until smooth.
  6. Pour the filling over the baked crust. Return to the oven and bake for an additional 20-30 minutes until the filling is set.
  7. Cool the bars in the pan for 20 minutes, then transfer to a wire rack to cool completely before dusting with powdered sugar and cutting into squares.
