- 1 cup Gluten-Free Flour
- 1/2 cup Unsalted Butter (softened)
- 1/4 cup Powdered Sugar
- 1 pinch Salt
- 3 large Eggs (room temperature)
- 1 cup Granulated Sugar
- 1/2 cup Fresh Lemon Juice (freshly squeezed)
- 1 tablespoon Lemon Zest
- 1/2 cup Gluten-Free Flour
- 1 pinch Salt
- 1 teaspoon Baking Powder
- 1 cup Powdered Sugar (for dusting)
- 1 tablespoon Lemon Zest (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish and line it with parchment paper.
- Cream together softened unsalted butter, 1/4 cup granulated sugar, lemon zest, and vanilla extract in a large bowl until fluffy.
- Mix in 1 cup of gluten-free flour and kosher salt until you achieve a smooth dough consistency.
- Press the dough evenly into the prepared baking dish. Poke holes with a fork and bake for 20 minutes until golden brown.
- For the filling, whisk together room temperature eggs, 1 cup of granulated sugar, freshly squeezed lemon juice, the remaining lemon zest, 1/2 cup of gluten-free flour, and kosher salt until smooth.
- Pour the filling over the baked crust. Return to the oven and bake for an additional 20-30 minutes until the filling is set.
- Cool the bars in the pan for 20 minutes, then transfer to a wire rack to cool completely before dusting with powdered sugar and cutting into squares.
Notes
- Make sure to use freshly squeezed lemon juice for the best flavor.
- These bars can be stored in the fridge for up to a week.
