  • ¼ cup micro-cilantro, (or 2 tablespoons chopped cilantro)
  • 1 teaspoon toasted sesame seeds

  1. Preheat oven to 400ºF (200ºC).
  2. In a medium saucepan over medium heat, bring the quinoa and 2 cups of water to a boil then reduce the heat to medium-low and simmer until all the water has been absorbed, about 15 minutes. Fluff with a fork and set aside.
  3. Toss the cauliflower and carrots with the olive oil and spread in a single layer on an aluminum-foil-lined baking sheet. Season with salt, pepper, za’atar and crushed red pepper.
