Instructions
- Prepare the Shrimp: In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the shrimp and toss to coat evenly. Let marinate for 15 minutes.
- Make the Creamy Sauce: In a small bowl, whisk together mayonnaise, lime juice, honey, smoked paprika, salt, and pepper until smooth.
- Grill the Shrimp: Preheat a grill or grill pan over medium-high heat. Cook the shrimp for 2-3 minutes on each side until opaque and cooked through. Remove from the grill and set aside.
- Prepare the Tortillas: Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.
- Assemble the Tacos: Place a layer of shredded cabbage on each tortilla. Top with grilled shrimp, drizzle with the creamy sauce, and sprinkle with chopped cilantro. Serve with lime wedges on the side.
