Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste pepper
  • 8 small corn tortillas
  • 1 cup shredded cabbage (purple and green)
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon smoked paprika
  • to taste Salt
  • to taste pepper

Instructions

  1. Prepare the Shrimp: In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the shrimp and toss to coat evenly. Let marinate for 15 minutes.
  2. Make the Creamy Sauce: In a small bowl, whisk together mayonnaise, lime juice, honey, smoked paprika, salt, and pepper until smooth.
  3. Grill the Shrimp: Preheat a grill or grill pan over medium-high heat. Cook the shrimp for 2-3 minutes on each side until opaque and cooked through. Remove from the grill and set aside.
  4. Prepare the Tortillas: Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.
  5. Assemble the Tacos: Place a layer of shredded cabbage on each tortilla. Top with grilled shrimp, drizzle with the creamy sauce, and sprinkle with chopped cilantro. Serve with lime wedges on the side.

Notes

  • For extra flavor, add a bit of lime zest to the marinade.
  • You can add sliced avocado or diced tomatoes for added texture and flavor.
  • If you prefer a spicier kick, add a pinch of cayenne pepper to the marinade.
  • For a low-carb option, serve on lettuce leaves instead of tortillas.
