Description
A flavorful grilled chicken dish marinated in herbs and lemons.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 lemons (sliced and juiced)
- 3 tablespoons fresh rosemary
- 3 tablespoons fresh thyme
- 3 tablespoons fresh parsley (chopped)
- 4 tablespoons olive oil
- 3 cloves garlic (minced)
- Salt and pepper to taste
- Lemon zest (from 1 lemon)
- Optional: lemon wedges for garnish
Instructions
- Marinate the Chicken: In a bowl, combine the lemon juice, olive oil, minced garlic, lemon zest, rosemary, thyme, salt, and pepper. Mix well. Add the chicken breasts to the bowl, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 1 hour, or overnight for more flavor.
- Preheat the Grill: Preheat your grill to medium-high heat.
- Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Grill each side for about 6-7 minutes, or until the chicken is fully cooked and has nice grill marks.
- Prepare the Plate: Slice the grilled chicken and arrange it on a serving plate. Garnish with fresh parsley and slices of lemon.
- Serve: Serve hot with your choice of sides, such as grilled asparagus or a fresh salad.
Notes
- Even Cooking: Pound the chicken breasts to an even thickness to ensure they cook evenly.
- Marination Tip: If short on time, a quick 30-minute marinade also works, but overnight marination is recommended for the best flavor.
- Heat Level: Adjust the grill heat as necessary to prevent burning.
- Resting Time: Allow the grilled chicken to rest for a few minutes before slicing to retain its juices.
