Description
A refreshing rotini pasta salad enhanced with a creamy Greek yogurt dressing and fresh herbs.
Ingredients

- 8 oz rotini pasta
- 1 cup fresh parsley, chopped
- 1/2 cup fresh basil, chopped
- 1/4 cup chives, chopped
- 1 cup whole milk Greek yogurt
- 2 tbsp lemon juice (freshly squeezed)
- 2 garlic cloves
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 1/2 cup grated Parmesan cheese
Instructions
- Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and allow to cool slightly.
- In a blender, combine parsley, basil, chives, Greek yogurt, lemon juice, garlic cloves, olive oil, salt, and pepper. Blend until smooth.
- In a large bowl, mix cooled pasta with cherry tomatoes and cucumber. Pour the dressing over the salad and toss gently to coat.
- Sprinkle grated Parmesan on top and mix lightly. Adjust seasoning if needed.
- Serve immediately or chill in the refrigerator for about 30 minutes before serving.
Notes
- For an added crunch, consider adding nuts or seeds.
- This salad is perfect for meal prep and can be stored in the refrigerator for a few days.
