Description

A refreshing rotini pasta salad enhanced with a creamy Greek yogurt dressing and fresh herbs.


Ingredients

  • 8 oz rotini pasta
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh basil, chopped
  • 1/4 cup chives, chopped
  • 1 cup whole milk Greek yogurt
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and allow to cool slightly.
  2. In a blender, combine parsley, basil, chives, Greek yogurt, lemon juice, garlic cloves, olive oil, salt, and pepper. Blend until smooth.
  3. In a large bowl, mix cooled pasta with cherry tomatoes and cucumber. Pour the dressing over the salad and toss gently to coat.
  4. Sprinkle grated Parmesan on top and mix lightly. Adjust seasoning if needed.
  5. Serve immediately or chill in the refrigerator for about 30 minutes before serving.
