Lemon Garlic Chicken and Rice

Description

A delicious one-pan meal of chicken and rice infused with lemon and garlic flavors.


Ingredients

Scale
  • 4 Boneless Skinless Chicken breasts
  • 4 tablespoons Butter
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 tablespoon Minced Garlic
  • 1 ½ cups White Rice
  • 3 cups Chicken Broth
  • 1 Lemon (juiced and zested)

Instructions

  1. Melt the butter in a large deep skillet over medium high heat.
  2. Add the chicken to the skillet. Season it with oregano, basil, salt and pepper.
  3. Brown the chicken in the butter for approximately 2-3 minutes on each side. Remove from the pan to a separate plate.
  4. Add the garlic to the pan and sauté for about 30 seconds until you can smell the garlic.
  5. Gently stir in the rice, chicken broth, lemon juice and zest.
  6. Place the chicken on top of the rice in the pan.
  7. Bring the mixture to a boil. Cover and reduce the heat to low.
  8. Cook for 20-25 minutes until the liquid is absorbed, rice is tender and chicken is cooked through.
  9. Remove from the heat. Let the mixture sit for 5 minutes and then the chicken and rice is ready to serve and enjoy!
