Description

Deliciously seasoned BBQ chicken thighs, baked to perfection.


Ingredients

  • 4 pieces boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sugar free ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon liquid smoke
  • 2 tablespoons erythritol

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, combine olive oil, smoked paprika, garlic powder, onion powder, chili powder, ground cumin, salt, and black pepper.
  3. Rub the spice mixture evenly over both sides of the chicken thighs.
  4. In another bowl, whisk together sugar free ketchup, apple cider vinegar, Worcestershire sauce, liquid smoke, and erythritol.
  5. Place chicken thighs on a baking sheet and bake for 15 minutes.
  6. Brush the chicken with half of the BBQ sauce and bake for another 10 minutes or until internal temperature reaches 165°F.
  7. Remove chicken from the oven and brush with remaining BBQ sauce.
  8. Let rest for 5 minutes before serving.

Notes

  • For best results, let the chicken marinate in the spice mixture for at least 30 minutes before baking.
