Description

A delightful mini pie featuring a medley of fresh berries in a graham cracker crust.


Ingredients

Scale
  • 12 Mini Graham Cracker Pie Crusts
  • 2 cups strawberries (diced)
  • 1 cup blueberries
  • 1 cup raspberries
  • ¼ cup sugar
  • ¼ teaspoon salt
  • 1 Tablespoon cornstarch
  • 3 cups vanilla ice cream (optional topping)

Instructions

  1. Preheat oven to 375℉.
  2. Place mini graham cracker pie crusts on a baking sheet; set aside.
  3. In a large mixing bowl, gently combine strawberries, blueberries, and raspberries.
  4. Add sugar, salt, and cornstarch and toss to coat.
  5. Fill each pie crust with berry mixture and gently press into crusts using a spoon.
  6. Place pan in the oven and bake for 30-35 minutes, until fruit is bubbling and crust is golden brown.
  7. Serve with a scoop of vanilla ice cream on top, if desired.

Notes

  • Optional: Serve pies with whipped cream for added richness.
  • Can be made with frozen berries if fresh are not available.
