Description

Instructions

  1. Preheat the Oven: Preheat to 350°F (175°C). Grease and flour a loaf pan.
  2. Prepare the Cake Batter: In a bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract. In another bowl, mix flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, alternating with milk. Mix until just combined.
  3. Assemble the Cake: Pour half of the batter into the prepared loaf pan. Layer half of the peach slices and raspberries over the batter. Add the remaining batter on top, smoothing the surface. Arrange the remaining peach slices and raspberries on top.
  4. Bake: Bake in preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the Drizzle: In a small bowl, mix powdered sugar with lemon juice until smooth. Drizzle over cooled cake.
  6. Garnish: Top with additional raspberries and mint leaves if desired.
