- 1 cup (200g) creamy peanut butter
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1/2 cup (60g) all-purpose flour
- 1/2 teaspoon (2g) baking powder
- 1/4 teaspoon (1g) salt
- 1/2 cup (100g) powdered sugar for rolling
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, mix peanut butter, granulated sugar, egg, and vanilla until smooth.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Place powdered sugar in a shallow bowl. Scoop dough into 1-inch balls and roll in powdered sugar to coat heavily.
- Place balls 2 inches apart on prepared baking sheets.
- Bake for 10-12 minutes until cookies are set and crinkled on top.
- Let cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
- Store cookies in an airtight container for up to a week.
- For a variation, you can add chocolate chips to the dough.
