Description

This hearty beef and tater tot casserole is a comforting dish perfect for family dinners.


Ingredients

  • 2 pounds ground beef
  • 1 cup chopped carrots
  • 1 medium onion (chopped)
  • 2 ribs celery (chopped)
  • to taste salt and pepper
  • 2 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 tablespoons Worcestershire sauce
  • 2 cups beef broth
  • 1 cup frozen peas
  • 2 cups shredded cheddar cheese
  • 2 pounds frozen tater tots

Instructions

  1. Preheat the oven to 400ºF.
  2. Heat a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up as it cooks, until browned and cooked through.
  3. Add the carrots, onion, and celery to the beef. Season to taste with salt and pepper. Continue to cook, stirring occasionally, until the vegetables are softened, about 8 minutes.
  4. Add in the garlic and cook until fragrant, about 30 seconds.
  5. Move the beef to the sides of the pan and add the tomato paste to the center. Let it cook, breaking it up a bit, until warmed through, then stir into the beef.
  6. Move the beef to the side of the pan again, and melt the butter in the center. Add the flour and mix to combine. Add the Worcestershire sauce.
  7. Slowly pour in the beef broth, stirring and combining the butter/flour mixture with the beef and vegetables. Let the mixture cook until the sauce has thickened slightly. Season with salt and pepper to taste.
  8. Stir in the frozen peas.
  9. Pour the beef mixture into a 9×13-inch casserole dish. Sprinkle the cheddar cheese over the top.
  10. Arrange the tater tots into a single layer over the top.
  11. Bake until the tots are crispy and the beef mixture is bubbling, about 35 minutes.
  12. Let the casserole sit for 10 minutes before serving.
