Description
Delicious and crispy smashed red potatoes, perfect as a side dish!
Ingredients

- 1 1/2 lbs small red potatoes (golf ball size)
- 4 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 tsp all-purpose seasoning (or seasoning of your choice)
- 1 tsp garlic powder
- 2 tbsp fresh parsley or rosemary (minced)
Instructions
- Preheat oven to 400°F.
- Bring large saucepan of salted water to a boil. Add the potatoes and cook them until they are fork-tender, about 20 minutes.
- Drain potatoes when done and allow them to cool slightly until you can safely handle them, about 5 minutes.
- Drizzle 2 tablespoons of olive oil on a sheet pan lined with foil, and set the potatoes in rows. Use a fork, potato masher, or bottom of a cup to gently press down on the potato until it slightly mashes. You want these rustic and chunky; the thinner you smash them, the crispier they’ll become. Let steam release and rest 5 more minutes.
- Drizzle the tops with remaining 2 tablespoons of olive oil and sprinkle with salt and ground black pepper.
- Place them on the top rack of the oven, and bake them for 30-35 minutes, or until crispy, crunchy, and golden brown.
- Sprinkle with minced parsley, rosemary and/or seasonings of choice. Serve warm.
Notes
- For extra crispiness, smash them a little thinner.
- Feel free to experiment with different seasonings!
