Description

Delicious vanilla cream sandwich wafers that are light and fluffy, perfect for any occasion.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened) for filling
  • 1 1/2 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract for filling
  • Additional powdered sugar for dusting (optional)

Instructions

  1. Prepare the Wafer Dough:
    1. Preheat oven to 350°F (175°C).
    2. In a bowl, cream together the softened butter and sugar until light and fluffy.
    3. Add the vanilla extract and mix well.
    4. Gradually add the flour and salt, followed by milk. Mix until you form a smooth dough.
    5. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  2. Bake the Wafers:
    1. Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
    2. Use a round cookie cutter to cut out the wafers.
    3. Place the wafers on a parchment-lined baking sheet.
    4. Bake for 10-12 minutes until the edges are slightly golden. Cool on a wire rack.
  3. Prepare the Vanilla Cream Filling:
    1. In a mixing bowl, beat the softened butter until creamy.
    2. Gradually add powdered sugar and mix until smooth.
    3. Add vanilla extract and heavy cream; beat until the mixture is light and fluffy.
  4. Assemble the Sandwich Wafers:
    1. Spread a generous amount of vanilla cream filling on the flat side of one wafer.
    2. Place another wafer on top to form a sandwich.
    3. Repeat with remaining wafers and filling.
  5. Finishing Touches: Optionally, dust the sandwich wafers with powdered sugar before serving.

Notes

  • Ensure the butter is at room temperature for a smooth dough and filling.
  • If the dough becomes too soft during cutting, refrigerate for a few more minutes.
  • For extra flavor, consider adding a teaspoon of almond extract to the wafer dough.
  • Store the wafers in an airtight container to maintain freshness.
