Description
A delicious shrimp and asparagus pasta dish that is quick and easy to make, perfect for a weeknight dinner.

- 8 oz spaghetti or fettuccine
- 1 lb shrimp (peeled and deveined)
- 1 bunch asparagus (trimmed and cut into 2-inch pieces)
- 4 cloves garlic (minced)
- Juice of 1 large lemon
- 2 tbsp extra virgin olive oil
- ½ cup fresh Parmesan cheese (grated)
- Salt & pepper to taste
Instructions
- Cook the pasta: Boil salted water in a large pot, add pasta, and cook until al dente according to package instructions. Drain and reserve some pasta water.
- Sauté shrimp: In a skillet over medium heat, heat olive oil, add minced garlic, then shrimp seasoned with salt & pepper. Cook until shrimp are pink and opaque (about 3-4 minutes).
- Add asparagus: Toss chopped asparagus into the skillet and cook for another 3 minutes until tender but still crisp.
- Combine with lemon: Squeeze fresh lemon juice over the shrimp-asparagus mixture, stirring to combine flavors.
- Toss with pasta: Mix the drained pasta with the shrimp mixture, adding reserved pasta water for desired consistency.
- Finish & serve: Grate fresh Parmesan over the top and serve hot with extra lemon wedges.
Notes
- For extra flavor, consider adding red pepper flakes or fresh herbs.
- This dish can be served with additional lemon wedges for a zesty kick.
