Almond Butter Bars

Description

Deliciously chewy almond butter bars perfect for a snack or dessert.


Ingredients

Scale
  • 1/3 cup whole milk greek yogurt
  • 1/3 cup creamy almond butter
  • 1 large egg
  • 2 Tablespoons refined coconut oil (melted)
  • 1/2 cup maple syrup
  • 1 Tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 3/4 cup rolled oats
  • 1/2 cup sliced almonds
  • 1/4 cup mini chocolate chips (or mini white chocolate chips)

Instructions

  1. Preheat the oven to 325°F and line a 8-inch x 8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the yogurt, almond butter, egg, melted oil, maple syrup, vanilla and cinnamon.
  3. Add the oats, almonds and chocolate chips. Mix together until combined.
  4. Transfer the mixture to the prepared pan and bake for 30-35 minutes (or until the bars can hold their shape and look set).
  5. Remove, let cool completely (at least 1 hour), and slice into bars.
  6. Serve and enjoy or save for later!
