- 1.5 pounds chicken breast fillets (boneless, skinless)
- 2 cups cherry tomatoes, halved
- 1.5 cups mozzarella cheese, shredded
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- Fresh basil leaves, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the chicken breasts into bite-sized pieces. Season with salt, pepper, and Italian seasoning.
- Halve the cherry tomatoes and set aside.
- Heat olive oil in a skillet over medium-high heat. Add minced garlic and sauté until fragrant. Add chicken pieces and cook until they are golden on the outside but not fully cooked through, about 5-6 minutes.
- In a baking dish, layer the partially cooked chicken at the bottom. Add the halved cherry tomatoes on top of the chicken. Sprinkle the shredded mozzarella cheese evenly over the top.
- Place the baking dish in the preheated oven. Bake for 25-30 minutes, or until the chicken is fully cooked and the cheese is bubbly and golden.
- Remove from the oven and let it cool slightly. Garnish with fresh basil leaves before serving.
Notes
- For deeper flavor, marinate the chicken with the seasonings and a splash of lemon juice for 30 minutes before cooking.
- If you like a spicier dish, add a pinch of red pepper flakes with the seasonings.
- Ensure that the chicken pieces are not too small to prevent overcooking them in the oven.
- This dish pairs well with a fresh green salad or garlic bread on the side.
