Description

A delicious cheesy chicken dish baked with fresh tomatoes and mozzarella cheese.


Ingredients

  • 1.5 pounds chicken breast fillets (boneless, skinless)
  • 2 cups cherry tomatoes, halved
  • 1.5 cups mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the chicken breasts into bite-sized pieces. Season with salt, pepper, and Italian seasoning.
  3. Halve the cherry tomatoes and set aside.
  4. Heat olive oil in a skillet over medium-high heat. Add minced garlic and sauté until fragrant. Add chicken pieces and cook until they are golden on the outside but not fully cooked through, about 5-6 minutes.
  5. In a baking dish, layer the partially cooked chicken at the bottom. Add the halved cherry tomatoes on top of the chicken. Sprinkle the shredded mozzarella cheese evenly over the top.
  6. Place the baking dish in the preheated oven. Bake for 25-30 minutes, or until the chicken is fully cooked and the cheese is bubbly and golden.
  7. Remove from the oven and let it cool slightly. Garnish with fresh basil leaves before serving.

Notes

  • For deeper flavor, marinate the chicken with the seasonings and a splash of lemon juice for 30 minutes before cooking.
  • If you like a spicier dish, add a pinch of red pepper flakes with the seasonings.
