- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- ⅓ cup granulated sugar (Cinnamon Swirl)
- 1 tablespoon ground cinnamon (Cinnamon Swirl)
- 1 cup powdered sugar (Glaze)
- 2 tablespoons milk (Glaze)
- ½ teaspoon vanilla extract (Glaze)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, beat the butter and sugar with an electric mixer until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract.
- Combine Buttermilk and Flour Mixture: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.
- Prepare Cinnamon Swirl: In a small bowl, mix the sugar and cinnamon together.
- Assemble Muffins: Spoon half of the batter into the muffin cups. Sprinkle half of the cinnamon swirl mixture over the batter. Add remaining batter on top, then sprinkle the rest of the cinnamon mixture.
- Create Swirls: Use a toothpick to swirl the cinnamon mixture into the batter gently.
- Bake: Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack.
- Make the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Glaze the Muffins: Once muffins are cooled, drizzle the glaze over the top.
Notes
- Ensure all ingredients are at room temperature for a smoother batter.
- For a richer flavor, you can use brown sugar in the cinnamon swirl.
- If you don’t have buttermilk, substitute with regular milk mixed with 1 tablespoon of lemon juice or vinegar.
- Store muffins in an airtight container to keep them moist for up to three days.
