Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined. Gradually mix in the boiling water until the batter is smooth.
  4. Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Once baked, remove them from the oven and allow them to cool in the pans for about 15 minutes. Then, transfer the cakes to wire racks to cool completely.
  6. In a mixing bowl, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  7. Once the cakes are completely cool, place one layer on a serving plate. Spread the whipped cream filling over the top, then place the second layer on top.
  8. In a small saucepan, heat the heavy cream until just boiling. Remove from heat and pour over the chocolate chips in a bowl. Let it sit for a few minutes, then stir until smooth.
  9. Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  10. Refrigerate the cake for at least 30 minutes to set the ganache before serving.
