Description
A delicious homemade classic Italian tiramisu, featuring layers of mascarpone and coffee-soaked ladyfingers, finished with a dusting of cocoa powder.

- 500 g mascarpone cheese
- 300 g ladyfinger biscuits (Savoiardi)
- 2 cups freshly brewed espresso
- 100 g granulated sugar
- 4 large eggs
- for dusting unsweetened cocoa powder
- 2 tablespoons dark rum or coffee liqueur (optional)
- 1 teaspoon vanilla extract
- a pinch salt
Instructions
- Prepare Coffee Mixture: Brew 2 cups of espresso and allow it to cool. Add the dark rum or coffee liqueur if using and mix well.
- Prepare the Mascarpone Mixture: Separate the egg yolks from the whites. Place the yolks in a bowl and mix with the sugar. Beat until the mixture is thick and pale. Add the mascarpone cheese to the egg yolk mixture and stir until smooth. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the mascarpone mixture until well combined.
- Assemble the Tiramisu: Quickly dip each ladyfinger biscuit into the coffee mixture, ensuring they are moistened but not soggy. Arrange a layer of soaked ladyfingers at the bottom of a rectangular dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture. Smooth out the top layer for an even finish.
- Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Serve: Before serving, dust generously with cocoa powder.
