Description

Ingredients

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup butter, melted
  • 1 cup fresh blueberries
  • 1/4 cup sugar (for blueberry sauce)
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Crust: Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside to cool.
  2. Make the Blueberry Sauce: In a saucepan, combine blueberries, sugar, water, and lemon juice. Cook on medium heat until the blueberries release juices, stirring occasionally. In a small bowl, mix cornstarch with a tablespoon of water. Add the cornstarch mixture to the blueberry sauce. Stir until thickened. Remove from heat and let cool.
  3. Prepare the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add sour cream and vanilla extract, and mix until combined. Add eggs, one at a time, mixing on low speed after each until just blended.
  4. Assemble the Cheesecake: Pour half of the cheesecake filling into the crust. Drizzle half of the blueberry sauce over the cheesecake filling. Swirl the sauce into the filling using a toothpick or a knife. Pour remaining cheesecake filling on top and repeat the swirl with the rest of the blueberry sauce.
  5. Bake the Cheesecake: Bake in the preheated oven for 55-60 minutes or until center is set and edges are slightly puffed. Turn off the oven, leave the door slightly ajar, and let the cheesecake cool in the oven for 1 hour.
  6. Chill: Remove from the oven and refrigerate for at least 4 hours or overnight.

  • Use a water bath while baking to minimize cracks.
