Shrimp and Tortellini with Roasted Garlic Cream Sauce

Description

A creamy and delicious shrimp and tortellini dish with roasted garlic and Parmesan cheese.


Ingredients

  • 9 oz fresh tortellini
  • 1 lb large shrimp, peeled and deveined
  • 1 head roasted garlic
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Cut off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until golden.
  2. Boil water in a large pot, add salt, then cook tortellini according to package instructions (3-5 minutes).
  3. In a skillet over medium heat, melt butter. Add shrimp; cook for 2-3 minutes until pink and opaque. Remove from skillet.
  4. Lower heat; pour in heavy cream and scrape any bits from the bottom of the pan. Squeeze in roasted garlic and stir in Parmesan until melted. Season with salt and pepper.
  5. Add cooked tortellini to the sauce and toss gently to combine. Serve immediately with extra Parmesan if desired.
