Description
A creamy and delicious shrimp and tortellini dish with roasted garlic and Parmesan cheese.
Ingredients

- 9 oz fresh tortellini
- 1 lb large shrimp, peeled and deveined
- 1 head roasted garlic
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Cut off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until golden.
- Boil water in a large pot, add salt, then cook tortellini according to package instructions (3-5 minutes).
- In a skillet over medium heat, melt butter. Add shrimp; cook for 2-3 minutes until pink and opaque. Remove from skillet.
- Lower heat; pour in heavy cream and scrape any bits from the bottom of the pan. Squeeze in roasted garlic and stir in Parmesan until melted. Season with salt and pepper.
- Add cooked tortellini to the sauce and toss gently to combine. Serve immediately with extra Parmesan if desired.

- This dish can be customized with your choice of vegetables or herbs.
- Leftovers can be stored in the fridge for up to 2 days.
