- 4 boneless, skinless chicken breasts (about 1 lbs)
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 large eggs
- 1 cup vegetable oil (for frying)
- 8 taco shells (soft or crunchy)
- Fresh toppings: lettuce, diced tomatoes, shredded cheese
Instructions
- Cut the chicken breasts into strips and season with salt and pepper.
- In a bowl, combine flour, cornstarch, paprika, garlic powder, and onion powder.
- Set up a breading station with one bowl for the flour mixture, one for beaten eggs, and a third for coated chicken.
- Dredge each chicken strip in the flour mixture, dip in the egg wash, then return to the flour for double coating.
- Heat oil in a skillet over medium-high heat; fry the chicken strips until golden brown and cooked through (about 5-6 minutes per side).
- Warm taco shells and fill them with crispy chicken and your choice of toppings.
