Description

A hearty and flavorful chicken soup made in a crockpot with beans, corn, and spices.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained
  • 1 (14 oz) can diced tomatoes
  • 1 (4 oz) can diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Tortilla strips or crushed tortilla chips
  • Shredded Monterey Jack or cheddar cheese
  • Diced avocado
  • Fresh cilantro, chopped
  • Lime wedges
  • Sour cream or plain Greek yogurt

Instructions

  1. Place the chicken breasts or thighs in the bottom of your crockpot.
  2. Add the diced onion, minced garlic, black beans, corn, diced tomatoes (with their juices), and diced green chiles on top of the chicken.
  3. Sprinkle the ground cumin, chili powder, smoked paprika, salt, and black pepper over the ingredients in the crockpot.
  4. Pour the chicken broth over everything, ensuring the chicken is mostly submerged.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is cooked through and tender.
  6. Carefully remove the chicken from the crockpot and place it on a cutting board or plate.
  7. Using two forks, shred the chicken into bite-sized pieces.
  8. Return the shredded chicken to the soup in the crockpot and stir to combine.
  9. Let the soup warm through for another 15-20 minutes. Taste and adjust seasoning if needed.
  10. Ladle the hot soup into bowls.
  11. Top generously with tortilla strips or crushed chips, shredded cheese, diced avocado, chopped cilantro, a dollop of sour cream, and a squeeze of fresh lime juice.
