- 1 egg
- 1 teaspoon vanilla extract
- 1 quart coffee ice cream (softened)
- 16 chocolate sandwich cookies
- 1 cup heavy cream
- 8 ounces dark chocolate, chopped
- Chocolate coffee beans (for decoration)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a square baking pan.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add milk, vegetable oil, egg, and vanilla extract. Mix until combined and smooth.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let cool completely in the pan.
- Once the cake is cool, spread the softened coffee ice cream evenly over the cake.
- Press chocolate sandwich cookies into the ice cream, spacing them evenly.
- Freeze the cake for at least 2 hours or until the ice cream is firm.
- Heat the heavy cream in a saucepan until it simmers.
- Remove from heat and add the chopped dark chocolate. Stir until smooth and glossy.
- Let the ganache cool slightly, then pour over the ice cream layer, allowing it to drip down the sides.
- Return to the freezer for another 30 minutes to set.
- Decorate the top with chocolate coffee beans.
- Cut into squares and serve immediately or keep frozen until ready to serve.
