- 1 package store-bought or homemade puff pastry
- 2 cups whole milk
- 4 egg yolks
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- for dusting confectioners’ sugar
Instructions
- Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry on a floured surface to a 1/4-inch thickness. Cut the pastry into equal rectangles (approximately 3×6 inches). Place the pastry rectangles on a baking sheet lined with parchment paper. Prick the pastry with a fork to avoid puffing up excessively. Cover with another sheet of parchment and place a baking sheet on top to weigh it down. Bake for 15-20 minutes or until golden brown. Let cool completely.
- Make the Vanilla Pastry Cream: In a saucepan, heat the milk over medium heat until it begins to simmer. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth. Gradually pour the hot milk into the egg mixture, whisking constantly to prevent cooking the eggs. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens. Remove from heat and stir in butter and vanilla extract. Transfer to a bowl, cover with plastic wrap touching the surface, and cool completely in the fridge.
- Make the Whipped Cream: In a chilled bowl, whip heavy cream, powdered sugar, and vanilla extract to soft peaks.
- Assemble the Mille-Feuille: Once the pastry is cool, layer one rectangle with a layer of vanilla pastry cream. Add a layer of whipped cream on top of the pastry cream. Place another pastry rectangle on top. Dust with confectioners’ sugar.

- Ensure pastry cream is fully cooled before assembling to prevent melting the whipped cream.
- For a more intricate decoration, drizzle melted chocolate or add fresh berries on top.
