Ingredients

- 1 cup diced cucumber
- 1 cup cherry tomatoes
- 1/4 cup Kalamata olives
- 1/4 diced red onion (soaked in hot water)
- 1 cup organic chickpeas (canned)
- 1 cup finely chopped lettuce
- 1/3 cup cubed cheese of choice
- 1/2 tablespoon olive oil
- 1 tablespoon white balsamic vinegar
- 2 tablespoons honey Dijon mustard
- 1/4 cup Greek yogurt
- pinch of salt
Instructions
- Whisk the dressing ingredients together in a small bowl until fully emulsified. Set aside. The dressing should be stored separately and added just before serving.
- In a large wide mouth jar, layer the ingredients in the following order: chickpeas, cucumbers, cheese, tomatoes, olives, gently packed lettuce, and red onion. This order keeps the vegetables crisp and prevents sogginess.
- To serve, pour the desired amount of dressing into the jar, secure the lid tightly, and shake until evenly coated. Alternatively, empty the jar into a serving bowl and toss with the dressing to combine.
