Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 fresh jalapeños, thinly sliced
- 1 cup fresh cilantro, chopped
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon lime juice
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Marinate the Chicken:
- In a bowl, combine the cilantro, garlic, olive oil, lime juice, honey, salt, and pepper to create the marinade.
- Add the chicken breasts to the bowl, ensuring they are fully coated with the marinade.
- Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
- Prepare the Grill:
- Preheat the grill to medium-high heat.
- Lightly oil the grill grates to prevent sticking.
- Grill the Chicken:
- Remove the chicken from the marinade and place it on the grill.
- Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- During the last few minutes of grilling, add the sliced jalapeños on top of the chicken for added flavor.
- Serve:
- Once cooked, transfer the chicken to a serving platter.
- Garnish with additional fresh cilantro and serve immediately.
Notes
- For less heat, remove the seeds from the jalapeños before slicing.
- Serve with a side of grilled vegetables or a fresh salad for a complete meal.
- If using a grill pan, ensure to preheat it well to achieve nice grill marks on the chicken.
