Instructions
- Prepare the Tortillas:
- Place a tortilla on a clean surface.
- Use a small sharp knife to carefully cut out jack-o’-lantern faces on one half of the tortilla. Be sure not to cut all the way through both sides if folded.
- Assemble the Quesadilla:
- Sprinkle a layer of shredded cheddar cheese on the uncut half of the tortilla.
- Add black beans, cooked chicken, or bell peppers if desired, on top of the cheese layer for extra flavor and nutrition.
- Fold the tortilla over to cover the filling, aligning the cut-out jack-o’-lantern faces.
- Cook the Quesadillas:
- Heat a skillet over medium heat and add a small amount of olive oil or butter.
- Place the assembled quesadilla in the skillet.
- Cook until the tortilla is golden brown and the cheese is melted, about 2-3 minutes per side.
- Serving:
- Remove from the skillet and let it cool slightly.
