Description

A fun and festive Halloween snack featuring cheesy quesadillas with spooky jack-o’-lantern faces.

Ingredients

Scale
  • 4 medium-sized flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup black beans (optional)
  • 1 cup cooked chicken, shredded (optional)
  • 1 bell pepper, thinly sliced (optional)
  • 2 tablespoons olive oil or butter (for cooking)

Instructions

  1. Prepare the Tortillas:
    • Place a tortilla on a clean surface.
    • Use a small sharp knife to carefully cut out jack-o’-lantern faces on one half of the tortilla. Be sure not to cut all the way through both sides if folded.
  2. Assemble the Quesadilla:
    • Sprinkle a layer of shredded cheddar cheese on the uncut half of the tortilla.
    • Add black beans, cooked chicken, or bell peppers if desired, on top of the cheese layer for extra flavor and nutrition.
    • Fold the tortilla over to cover the filling, aligning the cut-out jack-o’-lantern faces.
  3. Cook the Quesadillas:
    • Heat a skillet over medium heat and add a small amount of olive oil or butter.
    • Place the assembled quesadilla in the skillet.
    • Cook until the tortilla is golden brown and the cheese is melted, about 2-3 minutes per side.
  4. Serving:
    • Remove from the skillet and let it cool slightly.
    • Cut each quesadilla into smaller wedges if desired.
    • Serve warm as a fun and festive Halloween snack.

Notes

  • Ensure the skillet is not too hot to prevent burning the tortillas before the cheese has melted.
  • Be creative with the fillings. You can add other cheeses like Monterey Jack or mozzarella for a different flavor.
  • To make cutting out the jack-o’-lantern faces easier, use a sharp paring knife and take your time with the details.
  • If you prefer crispy quesadillas, bake them in the oven on a baking sheet for an even cooking.
