- 1 ½ cups shredded zucchini
- 2 large eggs
- ¼ cup all-purpose flour (or almond flour for gluten-free option)
- ¼ cup grated Parmesan cheese
- 1 clove garlic, minced
- 2 green onions, chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Grate the zucchini using a box grater. Transfer to a cheesecloth or clean towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the drained zucchini, eggs, flour, Parmesan, garlic, green onions, salt, and pepper. Mix well.
- Heat olive oil in a non-stick or cast iron skillet over medium heat.
- Scoop 2–3 tablespoons of the batter for each fritter into the pan. Flatten gently with a spatula.
- Cook for 3–4 minutes per side, until golden brown and crisp.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with Greek yogurt, sour cream, or your favorite dip.
Notes
- For a gluten-free option, use almond flour instead of all-purpose flour.
- Make sure to remove excess moisture from the zucchini for crispier fritters.
