- 8 oz pappardelle pasta
- 1 lb large shrimp, peeled and deveined
- 1 head roasted garlic
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast until golden brown (about 30 minutes).
- In a large pot, bring salted water to a boil. Add pappardelle pasta and cook according to package instructions until al dente; drain.
- In a skillet over medium heat, add olive oil. Sauté the shrimp seasoned with salt and pepper until pink (about 3-4 minutes). Remove shrimp from skillet.
- Squeeze roasted garlic cloves into the skillet, stir in heavy cream over medium heat until slightly thickened.
- Return shrimp to skillet along with cooked pasta; stir gently until coated in sauce. Add grated Parmesan before serving.
- Top with parsley and serve warm.
