Ingredients
Scale
- 4 cups kale, chopped
- 1 cup quinoa
- 3 tablespoons pure maple syrup
- 1 tablespoon fresh ginger, grated
- 2 tablespoons lemon juice (freshly squeezed)
- 2 tablespoons extra virgin olive oil
- to taste salt
- to taste pepper
Instructions
- Rinse quinoa under cold water until clear; combine with 2 cups water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
- In a large bowl, massage chopped kale with olive oil and a pinch of salt for about 3 minutes until softened.
- In a small bowl, whisk together maple syrup, grated ginger, lemon juice, and olive oil to make the dressing.
- Fluff cooked quinoa with a fork; toss gently until combined. Let sit for 10 minutes before serving.
Notes
- For extra flavor, add nuts or seeds as a topping.
- This salad can be served warm or cold.
