Ingredients

  • 1 cup quinoa
  • 3 tablespoons pure maple syrup

Instructions

  1. Rinse quinoa under cold water until clear; combine with 2 cups water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
  2. In a large bowl, massage chopped kale with olive oil and a pinch of salt for about 3 minutes until softened.
  3. In a small bowl, whisk together maple syrup, grated ginger, lemon juice, and olive oil to make the dressing.
  4. Fluff cooked quinoa with a fork; toss gently until combined. Let sit for 10 minutes before serving.
