Description

Delicious bite-sized snacks made from leftover mashed potatoes and cheese.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 2 tablespoons chopped chives or green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a mini muffin tin or baking sheet.
  2. In a large bowl, combine mashed potatoes, cheddar cheese, and Parmesan cheese.
  3. Add eggs and mix until fully incorporated.
  4. Stir in flour, chives, garlic powder, black pepper, and salt until a thick batter forms.
  5. Scoop tablespoon-sized portions into the prepared pan.
  6. Lightly spray the tops with cooking spray for extra crispness.
  7. Bake for 18–22 minutes, until puffed, golden, and lightly crisp.
  8. Let cool slightly before serving.
