These delectable Lemon Curd Tartlets feature a buttery tart shell filled with tangy lemon curd, perfect for any occasion.

- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and diced
- 1 large egg yolk
- 1–2 tablespoons cold water
- 3/4 cup fresh lemon juice (about 4–5 lemons)
- 1 tablespoon lemon zest
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup unsalted butter, cut into pieces
- Powdered sugar for dusting
Instructions
- Prepare the Tartlet Shells:
- In a food processor, combine flour, powdered sugar, and salt. Pulse to mix.
- Add the cold, diced butter and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and 1 tablespoon of cold water. Pulse until the dough begins to come together. If needed, add more water, 1 teaspoon at a time.
- Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30-60 minutes.
- Preheat the oven to 350°F (175°C).
- Roll out the dough on a floured surface and cut into small circles to fit a mini muffin tin.
- Gently press the dough circles into the tin, and prick the bottom with a fork.
- Bake for 10-12 minutes or until lightly golden. Let them cool completely.
- Prepare the Lemon Curd:
- In a medium saucepan, whisk together lemon juice, zest, sugar, and eggs.
- Cook over medium heat, stirring constantly, until the mixture thickens, about 5-7 minutes.
- Remove from heat and add the butter pieces, stirring until smooth.
- Pass the curd through a fine mesh sieve into a bowl to remove any lumps. Cover the surface with plastic wrap and refrigerate until set.
- Assemble the Tartlets:
- Once the tartlet shells and lemon curd are cooled, spoon the lemon curd into each shell.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Ensure the butter for the tartlet shells is very cold to achieve a flaky texture.
- Constant stirring for the lemon curd is essential to prevent curdling.
- For added flavor, consider adding a pinch of vanilla extract to the lemon curd.
- Tartlets can be made a day in advance and stored in an airtight container in the fridge.
