Description

These delectable Lemon Curd Tartlets feature a buttery tart shell filled with tangy lemon curd, perfect for any occasion.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1 large egg yolk
  • 12 tablespoons cold water
  • 3/4 cup fresh lemon juice (about 45 lemons)
  • 1 tablespoon lemon zest
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, cut into pieces
  • Powdered sugar for dusting

Instructions

  1. Prepare the Tartlet Shells:
    • In a food processor, combine flour, powdered sugar, and salt. Pulse to mix.
    • Add the cold, diced butter and pulse until the mixture resembles coarse crumbs.
    • Add the egg yolk and 1 tablespoon of cold water. Pulse until the dough begins to come together. If needed, add more water, 1 teaspoon at a time.
    • Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30-60 minutes.
    • Preheat the oven to 350°F (175°C).
    • Roll out the dough on a floured surface and cut into small circles to fit a mini muffin tin.
    • Gently press the dough circles into the tin, and prick the bottom with a fork.
    • Bake for 10-12 minutes or until lightly golden. Let them cool completely.
  2. Prepare the Lemon Curd:
    • In a medium saucepan, whisk together lemon juice, zest, sugar, and eggs.
    • Cook over medium heat, stirring constantly, until the mixture thickens, about 5-7 minutes.
    • Remove from heat and add the butter pieces, stirring until smooth.
    • Pass the curd through a fine mesh sieve into a bowl to remove any lumps. Cover the surface with plastic wrap and refrigerate until set.
  3. Assemble the Tartlets:
    • Once the tartlet shells and lemon curd are cooled, spoon the lemon curd into each shell.
    • Chill in the refrigerator for at least 1 hour before serving.

  • Ensure the butter for the tartlet shells is very cold to achieve a flaky texture.
  • Constant stirring for the lemon curd is essential to prevent curdling.
