Description

Enjoy your Loaded Baked Potato Casserole!

Ingredients

Scale
  • 4 large russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup chopped cooked bacon
  • 1/4 cup chopped green onions
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Potatoes: Peel and cube the potatoes. Boil in salted water until tender, then drain.
  3. Mash Potatoes: In a large bowl, mash the potatoes with sour cream, melted butter, milk, garlic powder, salt, and pepper.
  4. Assemble Casserole: Spread half of the mashed potatoes in a greased baking dish. Sprinkle with half of the cheddar and mozzarella cheese, and half of the bacon.
  5. Second Layer: Spread the remaining mashed potatoes over the cheese and bacon layer.
  6. Add Toppings: Top with the remaining cheese and bacon.
  7. Bake: Optionally, sprinkle breadcrumbs on top for extra crunch. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Garnish: Garnish with chopped green onions before serving.

Notes

  • For extra creaminess, add a splash more milk when mashing the potatoes.
  • To add a kick, incorporate a pinch of cayenne pepper or chopped jalapenos.
  • This dish can be prepared a day ahead; just cover and refrigerate, then bake when ready to serve.
  • Feel free to experiment with different cheeses like Monterey Jack or Gouda for varied flavors.
