- 4 large russet potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 cup butter, melted
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup chopped cooked bacon
- 1/4 cup chopped green onions
- 1/2 cup shredded mozzarella cheese
- 1/4 cup breadcrumbs (optional for topping)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare Potatoes: Peel and cube the potatoes. Boil in salted water until tender, then drain.
- Mash Potatoes: In a large bowl, mash the potatoes with sour cream, melted butter, milk, garlic powder, salt, and pepper.
- Assemble Casserole: Spread half of the mashed potatoes in a greased baking dish. Sprinkle with half of the cheddar and mozzarella cheese, and half of the bacon.
- Second Layer: Spread the remaining mashed potatoes over the cheese and bacon layer.
- Add Toppings: Top with the remaining cheese and bacon.
- Bake: Optionally, sprinkle breadcrumbs on top for extra crunch. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish: Garnish with chopped green onions before serving.
Notes
- For extra creaminess, add a splash more milk when mashing the potatoes.
- To add a kick, incorporate a pinch of cayenne pepper or chopped jalapenos.
