Delicious and chewy oatmeal raisin cookies, perfect for any occasion!

- 1 cup flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ cup unsalted butter (softened)
- ½ cup dark brown sugar (packed)
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 ½ cups oats
- 1 ¼ cup raisins
Instructions
- Preheat the oven to 350 degrees. Grease a baking sheet with nonstick cooking spray and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, cream together the butter, dark brown sugar, and granulated sugar. Mix in the egg and vanilla.
- Add the flour mixture into the wet mixture and stir until just combined (be careful not to overmix).
- Stir in the oats and then fold in the raisins.
- Using a cookie scoop or spoon, add scoops of about 1 tablespoon cookie dough to the prepared cookie sheet. The cookies should be about 2 inches apart.
- Bake for 12-13 minutes in the preheated oven. The cookies should be evenly golden brown on top with cracks that are soft.
- Let the cookies cool for 2-3 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure to not overmix the dough to keep the cookies soft.
- Allow the cookies to cool on the baking sheet before transferring them to a wire rack.
